On Wednesday, July 31st, 2024, Versa Drain, Inc. completed the Coral Gables Grease Trap project at Miracle Mile, Coral Gables, FL.
Versa Drain’s involvement in the project was initiated based on a recommendation from the client’s plumbing engineer. A new grease trap installation was essential for a new restaurant’s compliance with the new requirements of Miami-Dade DERM. Versa Drain, Inc. collaborated closely with the permit expediting team and engineering firm to ensure the completion and approval of plans from the city of Coral Gables and Miami Dade DERM.
After careful consideration, it was determined that the most cost-effective solution for the grease trap installation would be indoors. The VDI team executed the removal of kitchen equipment from the back room and hand-dug and jack-hammered through coral rock to trench the location for the new grease trap. Following this, technicians installed and piped one SI-75 Kitchen Solids Interceptor and two GB-250-B Grease Interceptors with a sampling port. Two new floor sinks were added, one for the three-compartment sinks and another for the dishwasher, with the plumbing being routed into the new grease traps. Upon completion of backfilling and pouring concrete, the client decided to pour the concrete to grade and install new flooring in the back room later, ensuring that the concrete could fully cure without delaying the final inspection and their opening day.
