You know you have a grease trap or have been told you need a grease trap – but what is a grease interceptor? Although, we know there are other things you would rather be doing, like focusing on your customers. By writing this article, you can learn about your grease trap, ensure your facilities are in compliance, and get back to your real priorities sooner.

The basics: What is the purpose of a grease trap?

A Grease trap is a receptacle that kitchen wastewater flows into before entering the sewer water system.

How does it capture grease?

Grease is 10% to 15% less dense than water and does not mix with water. When kitchen wastewater flows into the interceptor, the Grease rises to the top while the grease-free water stays at the bottom. Pipes extend from the grease trap outlet to the grease trap’s base, allowing the grease-free water to escape and travel up the tube and into the sewer water system. The Grease is collected at the top to be pumped out and disposed of at a city grease collection facility.

What happens if I don't tend to my grease trap?

The most significant problem grease traps cause when not properly managed is clogs. These will clog an entire restaurant kitchen, causing grease-riddled debris to overflow drains and spill out onto the restaurant floor. This isn’t said as a scare tactic this is something commercial plumbers deal with regularly. This can cause employee injuries, cross-contamination, and nasty lingering smells.
